As a replacement for cornstarch (2 teaspoons Arrowroot flour 1 tablespoon cornstarch) as a flour substitute alone or mixed with rice flour for gluten –free baking. It used alone, the substitution is 1 teaspoon wheat flour, as a thickening agent for sauces, fruit pie filling, glazes, and pudding.
